Beef Rendang (video)

Ingredients


1.5kg fresh beef cut into bite size pieces


3 large onions

300gm shallots

50gm Turmeric powder - fresh would be better

1" ginger

1.5" galangal

6 lemon grass

6 cloves garlic

2 tbsp. chilli paste

Blend all the above


500gm coconut paste (Kerisik) - Recipe how to make this is also available

1.5tin coconut milk (approx. 500ml)

Turmeric leaves (sliced) (may be left out if not available)




Method


Mix the blended ingredients with the meat in a pot and cook on medium heat until the mixture is half dried. Then add in the coconut paste (kerisik). Continue cooking until almost dry then add in the coconut milk. Carry on cooking until rendang is slightly dry (not too dry) then finally add in the sliced turmeric leaves and mix well for 2 minutes or until turmeric leaves soften


The rendang is now ready to be served with hot rice or sticky rice.
