Smashed Fried Chicken (Ayam Penyet)

The Sambal for ayam penyet - you can prepare this ahead of time
6 tomatoes
1 large onion
2 garlic cloves
1 tbls belacan
4 red chillies
5 green chilies
Birdseye chillies (optional)
Sugar, salt
Fry in hot oil all except tomatoes, salt and sugar. When soft, blend together with the tomatoes.
Then fry again in the same oil adding sugar and salt.
When turned brown, turn off heat.
The Chicken
1 ltr water
2cm galangal (sliced)
2cm ginger (crushed)
3 garlic (crushed)
1 tbls salt
1 tbls turmeric
1-2 lime juice
Put in ½ chicken thigh pieces
Boil until half cooked
Take chicken out and fry in deep oil until golden brown. Pound the chicken pieces slightly with a rolling pin or pestle/mortar
1 packet tempeh
5-6 pieces of tofu
1 aubergine - cut into pieces
In deep cooking oil, fry tempeh and tofu until golden brown. Drain and set aside. Then fry the aubergine until slightly soft. Drain and set aside.
Then fry the sambal in the hot oil and add the aubergine and fry further until soft.
Serve the chicken with hot rice and the fried tempeh, tofu and aubergine. Pour the sambal over the chicken.
