Chicken (or beef) in soy sauce (masak kicap)

Ingredients

500gm Chicken cut into small pieces.

Marinade with salt and turmeric powder.

Potatoes (optional) - sliced thinly and marinade in salt and turmeric


2-3 star anise

1 cinnamon stick

2-3 cardamom pods

Onions sliced thinly

Ginger sliced thinly


4 tbls Soy sauce

Cooking oil


Method

Fry the potatoes in hot oil until soft. Then put aside.

Fry the chicken until cook and put aside.


Using the same oil from the chicken reduce it slightly and fry the star anise, cinnamon stick, cardamom, onions and ginger until soft.

Then add the cooked chicken and soy sauce and mix well. Then turn off the heat and add in the potatoes and mix.

Garnish with chopped spring onions or coriander leaves.


Best served with hot rice.
