Pineapple Curry (Pajeri Nenas)(video)

Ingredients
1 tinned pineapple rings (drained)
Cooking oil
A-
2 Cinnamon Sticks
4 cardamom
3 star anees
B-
2 large onion
4 garlic cloves
1” ginger
Blended together
C-
2 tbl spoon fish curry powder
2 tbl spoon Dried shrimps (udang kering)
4 tbl spoon Browned Coconut paste (kerisik)
1 block palm sugar
2-3 cups coconut milk
Salt to taste
Method
In a hot pot of cooking oil, put in ingredients A . After 1 minute add in ingredients B. Leave to brown and the oil rises and aromatic. Add in the fish curry powder and mix well.
Add in the rest of ingredients C . Simmer until the sauce becomes thicker.
Add in the pineapple rings, and simmer for another 5 minutes.
Serve with hot rice. It is also nicer once left overnight as sauce becomes thicker.
