Sweet Coconut Palm Sugar filling (inti kelapa) (video)

Ingredients

2 Freshly grated coconut (or desicated coconut if not available)

500 ml Water

2 pcs Palm sugar

White sugar to taste

3 Screw pine leaves (pandan leaves)




Method

Melt down the palm sugar in the water


In a dry pan, put the coconut in and add in white sugar and melted palm sugar.

Put in the pandan leaves if available.

Cook until dry and golden brown and aromatic.


Used as filling for various desserts in Malaysia. Like kuih koci, traditional sweet dumpling wrapped in banana leaves or simply use it in pancake rolls.
