Sweet and Sour Prawns / Fish
500 gm prawns or small pompret - cleaned, washed and dried
1” thick ginger - shredded
1 stalk spring onion - sliced fine
1 red chilly - cut in long fine strips
¼ carrot - shredded
Batter -
2 tbls spoons flour
1 egg
Salt and pepper
Coat the prawns / fish with batter, fry until golden brown, then drain
Blend corn flour with water, vinegar, soy sauce, sugar and tomato ketchup, ginger and chillies and thicken in a saucepan. Then add carrots and when soft add spring onions.
Pour sauce over prawns/ fish and garnish with spring onions.
