Homemade Kuih Pelita - A dessert especially during Ramadan in Malaysia

Step one
Prepare your little containers, this can be small plastic containers or ramekin dishes. Typically in Malaysia the containers are made from banana leaves.
If you have banana leaves, you can cut a small piece to cover the bottom part of the containers or ramekin dishes. This recipe will make about 12-15 depending the size of the containers.
In each container add half a teaspoon of sugar.
Step 2
Blend 8 screwpine leaves (daun pandan) with 4 cups of water
Strain into a cooking pot
Step 3
Add ½ cup sugar
1 cup rice flour
½ tsp salt
Mix well with a whisk
Then turn on the heat on low-medium, keep stirring with the whisk until the mixture starts popping. Then slowly spoon enough mixture into your containers, levelling them with a spoon.
Step 4
Mix in a cooking pot:
1 ¼ cup coconut milk
2 cups of water
½ cup rice flour
1 tbls sugar
½ tsp salt
1 tbls corn flour
On low-medium heat star stirring with a whisk until the mixture starts popping. Now slowly pour this mixture into the containers over the green pandan mixture.
Now put these in the fridge until you are ready to serve. Best served cold.
