Sweet Crispy Pancake (Apam Balik)

Ingredients

4 cups of self raising flour

3 cups of milk

2 eggs

½ cup sugar


For the filling

Creamed corn

Roasted crushed peanuts

Sugar

Butter


Method

Mix all together until smooth. If the texture is too thick, add some water to dilute slightly.

Run through a strainer to remove any lumps.


Heat up the apam balik pan or a normal pan on medium heat.

Butter the pan lightly. Pour in a ladle full of the mix into the hot pan and spread around the pan. Whilst the mix sizzles in the pan, add in a spoon full of creamed corn, half spoon sugar, blob of butter and some peanuts (optional).

Once cooked, fold into two and serve.
